I hear your pain. Having taken white mage as my first high level job, I wasn't so thrilled with leveling another job the exact same way.
Spira's Soloing guide is very useful for soloing summoner from 51 to 75. You can find it here:

It has some great ideas for locations to solo, but I often did things a little differently than what he suggested. Also, some of the tactics he used no longer work, like "TP Zonekills" since zoned bombs now disappear. Still, it's a must-read.
Between 37 and 48, I found fighting goblins with Carby was not too terrible. You'll need Carby Mitts for this, by the way. But, basically, you keep recasting Carby to fight a goblin until that goblin self-destructs, just like you would soloing a bomb. The two jungles have plenty of goblins to choose from to fit your level.
When I got to level 48, I soloed Explosures in Garlaige Citadel. It wasn't impossible, but it's pretty dangerous. I had to keep sneak on amidst all the bats and undead around me while fighting the bomb, so it keeps you on your toes, that's for sure.
Also, I'd strongly recommend doing ENMs with your summoner job as much as you can. If you do all three crag Promy ENMs, you can get 9000xp every five days (and possibly some rare items too).
There are escort quests you can undertake for experience points scrolls. Also, the Lost Chocobo quest can award experience points scrolls for fast times between certain cities. There's also a couple of Tavnazia quests that grant these scrolls as well, if you're far enough along in the missions. All of these are repeatable every Japanese Sunday.
All that said, when you do get into a party, it's because they couldn't find a white mage or a red mage that was willing to heal. But, because I could find xp in so many other ways, I didn't mind occasionally being the main healer in a party.
Thing is, when you're a white mage and you're main healing, that's all you do. When you're a summoner, though, you can do so much more. Your avatars can set up skillchains, you can magic burst fairly well, you can use all sorts of party enhancements. I thought it was much more interesting to be a summoner than a white mage in a party.
