At the end of the clip the model looks at a guy, her ears perk up, she turns away and touches her (right?) temple. Her ears fold into the neutral position.

So there is a manual override. At least one.

Edit: If they are really good, I mean really really good, and I wink at someone, the ear on that side would fold momentarily.

I tried them out at Hyper Japan in London last month.
They work through 2 sensors, one on your forehead and one on your earlobe.
Other then that, it is no real secret that your brain sends out certain signals depending on how you feel, I won't say this machine displays them 100% accurately, but the ears do respond to different sensations.
I would have one tiny issue though, I'm bald.

As for price: They're about 40 to 50 pounds the guy said.

She probably did touch the off switch there, but porbably in her pocket.
That black box behind the guy's ear is actually the battery pack with the off switch which can be detached from the headband with a retractable wire I believe.
